Paul Cluver Chardonnay 2009 Elgin

Tasting Notes:
Classic Chardonnay. The nose beckons with appealing notes of citrus and white flowers, hints of oatmeal, but no overt oak. The intensity and complexity follows through onto the palate which contains a combination of white peach and mineral flavours. The fine acidity adds poise and focus ensuring a long, elegant finish. We would recommend pairing it with lighter dishes like fresh fish, poultry, pork and game birds. It will also suit creamy pastas. Salmon dishes are a perfect match; especially local cold smoked Salmon Trout. Vinification: This wine was 100% wild fermented in a selection of French oak barrels. Fermentation was slow, lasting six to eight weeks ensuring fine integration of oak. After fermentation, a combination approach of lees stirring and barrel rolling was implemented to enhance the yeast autolysis. Not only does this process enhance the complexity and richness of the wine, the stirring keeps the wine reductive allowing it to remain on the lees without sulphur for nine and a half months. After tasting and blending trials, the wine was assembled, stabilised and bottled.

The Cluver family bought the Elgin farm in 1896 to provide summer
grazing for their livestock and in the mid 1900's it became a strong
apple producing region. In the mid 1980's the area was identified as a
cool climate wine-growing region which led to the first Cluver plantings
in 1986 with Paul Cluver cellar being the first to be established in
Elgin.
