Tasting Notes:
An attractive perfume of toasty oak pencil shavings mineral and blackberries greets the nose with smoothly layered and intense flavours of blackberry licorice and herbaceous/mineral background notes on the palate. Fullbodied and precise the wine is firm and ripe with elegant lingering tannins.

Bottled in early September, of the fifteen hectares planted, ten are
actually used to form the backbone of the wine: vines of tinto fino
grafted with our own clones by means of mass selection, which are
between 20 and 70 years old. Most of them come from small farms (La
Cañada, el Val, los Astrales...) facing north-south and with a density
of 2200 vines per hectare. In the fermentation there are some key
premises: Native yeast, not very long macerations, preferences for
pumping over, keeping all the fruit and getting the highest bouquet
intensity, gravitational movement of the grapes (in the new winery) and
avoiding a rough extraction of tannins. The wines are aged in French
(80%) and American (20%) oak barrels. The policy is to change 30% of the
barrels every year. The wine ages in barrels between 14 and 20 months
depending on the year. The wines are gently racked after the malolactic
fermentation and once or twice during the aging process.
