Tasting Notes:
Available in cases of 12 only A rich and powerful wine with layers of concentrated blackberries, cassis, and plum flavours supported by hints of menthol and fine grained tannins. A focused and intense wine displaying balance, elegance and a long and persistent finish. Dense and dark crimson with purple hues at the rim. A powerful bouquet of cassis, blackcurrants and violets with hints of mint, cedar and dried herbs. Rosemary encrusted rack of lamb with chunky oven roasted vegetables. The supple structure of this wine enables it to be consumed now, although 10 to 15 years in a good cellar will be amply rewarded.

In 1998 Hollick expanded north of Coonawarra by developing the 24 ha Red Ridge vineyard at Wrattonbully on a prime outcrop of terra rossa soil which includes trial plantings of Tempranillo and Sangiovese. 2007 saw Hollick celebrate their 25th Anniversary. It was also the year that Ian's daughters Mel and Kate joined 'the firm'. The appropriately named restaurant 'Upstairs at Hollick' is the first winery restaurant in Coonawarra and has been a tremendous success with panoramic views of the vineyards and more intimately into their barrel store.
